Chop chocolate into bite sized pieces and keep in a medium sized mixing bowl.

Combine milk, cream, sugar and bring to a simmer. Add 3/4 tbsp of this mix to your egg yolks and mix.

Add all the egg yolks into the saucepan with the cream milk mix and cook on low heat till it coats the back of your spoon, whisking continuously.

Pour the warm crème anglaise over the chocolate and mix well

Pour into bowls/ glasses and chill.
